Pancake Day!!

Pancake day has always been a tradition in my household, for years my brother and I would race home to find my mum standing in the kitchen with a big jug of batter ready for us to get involved with terrible flipping skills and spraying batter all over the counters.
For one night a year there were no boundaries in her kitchen, we could eat sugar, honey and nutella until we were blue in the face and make as much mess as our hearts desired.

Now that we’re “grown up” and flew the nest a couple of years ago it some how became a new tradition that I took on the role of Mum and fed my brother… I’ve ended up with the worse end of the deal right…?

Because my diet is slightly more restricted to my “stick thin brother who can shovel in a whole large domino’s pizza and still not put an ounce of fat on” I tend to make two batters.

They are SO simple:

My brothers was your traditional:
100g Plain Flour
2 Eggs
300ml Milk
1tbsp Sunflower Oil
Pinch of Salt
Sprinkle of Sugar
(Serves 8, he ate it all…)

Mine was:
2 Mashed Bananas
2 Eggs
1/2 Cup of Peanut Butter
Sprinkle of Cinnamon
(Serves 6, I halved all my ingredients)

Mix all together an viola! There really isn’t anything difficult about pancakes catering to everyones needs!

Lack of photographs is due to two hungry people practically eating them out the pan!
