Paleo Chocolate Truffles

This is my ultimate comfort snack, which tastes oh so naughty but contains nothing naughty! It’s a win win, I can scoff 12 in one sitting and not have to feel guilty or worry about the sick bloated tummy aches!

Recipe:
(Makes roughly 12 truffles)

  • 50g Walnuts
  • 20g Cacao Powder
  • 90g Dates
  • 1/2 tbsp Vanilla Essence
  • 1 tbsp Maple Syrup / Pure Honey

 

  • Blend Walnuts ( I use the nutribullet )
  • Soak dates in warm water for a couple of minutes before adding into the nutribullet with all other ingredients
  • Blend until a dough like consistency forms. You may need to use a spoon to help move the ingredients.
  • Wrap dough in cling film, forming a large ball and place in the fridge for 2 hours.
  • When ready roll out small truffle size balls

    Get creative with your coatings. My current favourites are desiccated coconut and cacao powder.
    Keep in an airtight container in the fridge and eat within serval days!
