When I first went Paleo and Gluten Free I had so much fun trying out new recipes and making amazing flavoursome foods for dinner.
Recently life has been so busy and hectic my dinners become an after thought, I literally boil vegetables with some cold meat or heat up a bowl of soup. If it can be made in 5 minutes then I’m satisfied.
Having a day off today I made a conscious effort to put more into my dinner. An old favourite of mine used to be cauliflower pizza, a filling home comfort that doesn’t give me the bloating sickening side effects 🙂

There is a knack to the process but once you’ve got it it’s simple!
Serves 1
Ingredients:
450g Cauliflower
Handful of Grated Low Fat Cheese
1 Crushed Garlic
1 Medium Egg
First you need to rice the cauliflower in a blender until finely grounded.
Place in a microwave safe bowl and cook for 4 minutes.
Once cooled place cauliflower in a tea towel and wring out excess water, this part is really important to avoid a soggy base!
Place cauliflower in a mixing bowl and add egg, garlic and cheese. You can also add herbs such as oregano and even chilli flakes to taste. Mix all ingredients together.
With you hands mould cauliflower into desired shape onto a baking tray. I lined mine with greaseproof paper as I find this is easier when it comes to taking it off.
Place in the oven at 180degrees for roughly 15mins, however keep an eye on your base as depending on the thickness it may need longer or shorter. You want your edges looking dark and your centre looking golden.
Then take your base out and add your cheese of choice, I used Low Fat Mozzarella. Place back in oven for 4 mins, this is to protect your base from going soggy from the tomato sauce you will apply next.
Remove your base and add your choice of tomato sauce ( I used a tomato paste) and toppings. For my toppings I used mushrooms and peppers which were pre-roasted and spinach.
Place back in oven for 4 mins.
Remove, pour yourself a glass of red wine and eat!
